Jalapeno Poppers…. of the g/d free variety


Living a gluten free/dairy free life is difficult, especially when you are craving things that you can’t find a recipe for. Enter Jalapeno Poppers. They are usually filled with a mixture of cheese and cream cheese, then breaded and fried. Basically they are all around a terrible idea for someone like me.

Last Saturday I was introduced to a recipe created by The Man’s brother. He is a food genius!

We gathered up the ingredients. Classic hummus, salsa, jalapenos, and bacon… that’s right bacon!

For the inside we mixed 2 heaping scoops of hummus and 1 heaping scoop of salsa. (It is clearly an exact science we have here. NOT! The mixture was a little bit runny to start with but it thickened up when they were cooking.)

We cut the jalapenos in half and then cut out the middle section of them all. We ended up using 5 peppers for this recipe.

Preheat the oven to 375 degrees. After the jalapenos were ready to go start to we filled them with the hummus and salsa mixture.

Once they were filled, we wrapped them with bacon and inserted a toothpick to hold the bacon in place. We used whole strips of bacon which actually ended up being a little too much. I know I know there can never be too much bacon. For these little guys half a strip is perfect, I promise!

We placed an oven safe rack on top of the baking sheet to give the bacon grease somewhere to go. I’m not sure how important this step is exactly but it definitely helped cook the poppers evenly.

We baked them at 375 for about 35 minutes. This is how they came out.

These were amazing and so simple to make. We will definitely be making them again VERY soon!
